Made with yogurt, cucumbers, garlic, and herbs, it's the perfect accompaniment to gyros, souvlaki, or as a refreshing dip for veggies.

1 1/2  cups plain Greek yogurt

1  cucumber, grated

2  tablespoons extra-virgin olive oil

2  tablespoons chopped shallots

1  tablespoon freshly squeezed lemon juice

4  sprigs fresh dill, stemmed and minced

1/2  teaspoon salt
