ingredients

2  tablespoons olive oil

4  ounces diced pancetta

1  medium yellow onion, thinly sliced

4  cloves garlic, minced

1  (1 lb) package collard greens, divided

1 1/2  cups chicken stock, divided

1  tablespoon lemon juice

1/2  tablespoon Tabasco sauce

1/2  teaspoon salt

1/2  teaspoon ground black pepper

preparation

step 1.

Heat a large Dutch oven over medium heat. Add pancetta, cook, stirring frequently until fully cooked and fat has rendered out, about 8 to 10 minutes. Add onion and garlic, cook, until softened and fragrant 5 to 7 minutes.

step 2.

Add half of the collard greens and ½ cup chicken stock, stir to combine, cover and cook until greens begin to wilt 2 to 3 minutes. Add remaining collard greens and remaining 1 cup chicken stock, cover, cook 4 to 5 minutes.

step 3.

Uncover, add lemon juice, Tabasco, salt and black pepper. Stir well to combine and serve immediately.
