2  tablespoons olive oil

1  medium yellow onion, diced

8  ounces orzo

8  cloves garlic, minced

3  cups chicken stock

1  (16 oz) package frozen peas, thawed

2  medium carrots, peeled and cut into ¼-inch pieces

1  teaspoon salt

1/2  teaspoon cayenne pepper


step 1.

In a medium dutch oven, heat oil over medium-high heat. Add onion, stirring frequently, until lightly browned and fragrant, about 5 minutes. Add orzo and garlic, stirring frequently, continue to cook 5 minutes more.

step 2.

Add chicken stock, cook uncovered, stirring frequently until liquid is absorbed and orzo is tender, about 10 minutes. Fold in carrots, peas, salt and cayenne. Cover and allow it cook for 5 minutes more.
