1  pound fresh green beans, trimmed

1  tablespoon olive oil

2  tablespoons chopped shallots

1  tablespoon minced garlic

1  (8 oz) package cremini mushrooms, sliced

1  teaspoon salt

1/2  teaspoon ground black pepper

1/2  cup sliced almonds, toasted

preparation

step 1.

In a large soup pot, bring 2 quarts of water to a simmer. Add green beans, allow to cook 4 minutes. Remove green beans and plunge into ice bath. After cooling down, drain and set aside.

step 2.

In a large skillet, heat oil over medium heat. Add shallot and garlic, cook, stirring occasionally until fragrant, 2 to 3 minutes. Add mushrooms, cook, stirring frequently until liquid has cooked out of mushrooms, about 5 minutes.

step 3.

Add green beans, salt and pepper. Toss well to coat, cook, 2 minutes. Add almonds, stir to incorporate fully. Serve immediately.
