1  pound red potatoes, cut into large dice, do not peel

1  tablespoon olive oil

2  cloves garlic, minced

1/2  teaspoon salt

1  tablespoon minced fresh rosemary (optional)

1/2  teaspoon black pepper

1  tablespoon chopped fresh sage (optional)

preparation

step 1.

Start with a large pot of cold water, bring the potatoes to a boil over medium high heat. Simmer for 10 minutes, or until the potatoes are partially cooked. Drain and set aside.

step 2.

Working in batches if needed: heat the oil in a large skillet over medium. Add the potatoes and brown on all sides. Add the aromatics and cook until the garlic is lightly browned and the herbs are crisp. Season with salt and pepper.
