1  pound fingerling potatoes, cut in half lengthwise

2  tablespoons olive oil

2  cloves garlic, minced

1  teaspoon salt

2  sprigs fresh thyme, picked over

   Ground black pepper

1  tablespoon shredded parmesan cheese (optional)

preparation

step 1.

Preheat oven to 400°F.

step 2.

In a large bowl, combine potatoes, oil, garlic, thyme, salt, and pepper until evenly coated.Spread onto a Transfer to a baking sheet cut side down and bake for 15 minutes.

step 3.

Remove from the oven. Sprinkle parmesan cheese on top. Bake for another 10-15 minutes or until potatoes are golden brown in color.
