1  cucumber, quartered lengthwise and cut into ¼-inch pieces

1  (10 oz) package cherry tomatoes, halved

8  ounces spinach

4  ounces crumbled feta cheese

1/2  cup black olives, halved

1  shallot, sliced

1/4  cup pine nuts


step 1.

In a large mixing bowl combine spinach, tomato, cucumber, olives, and shallot. Fold gently to combine, top with pine nuts and feta. Reserve any remaining mix in air-tight container in refrigerator, up to 3 days.
