6  cups rolled oats

1 1/2  cups unsweetened coconut flakes

1  cup cashews, roughly chopped

1  cup almonds, roughly chopped

2  tablespoons maple syrup

2  tablespoons vegetable oil

2  tablespoons brown sugar

4  teaspoons cinnamon

2  teaspoons vanilla extract

1  teaspoon salt

1  cup raisins


step 1.

Preheat the oven to 250°F.

step 2.

In a mixing bowl, combine rolled oats, unsweetened coconut flakes, cashews, and almonds.

step 3.

Add maple syrup, vegetable oil, brown sugar, cinnamon, vanilla extract, and salt to oat mixture, tossing well to coat.

step 4.

Evenly spread out oat mixture onto a rimmed baking sheet.

step 5.

Bake for 100 minutes, stirring every 20 minutes.

step 6.

Remove from oven, stir in raisins. Allow to cool.
