1  tablespoon olive oil

1  (10 oz) bag turkey giblets

1  turkey neck, cut into 4 piece

2  tablespoons unsalted butter

2  tablespoons all-purpose flour

2  cups chicken stock

1  teaspoon salt

1  teaspoon ground black pepper

preparation

step 1.

Heat 1 tablespoon olive oil in a medium saucepan over medium heat. Add giblets and neck pieces, cook, turning occasionally until browned about 8 to 10 minutes. Remove from pan to a paper towel lined plate, set aside.

step 2.

Reduce heat to medium-low, add butter to saucepan, cook, until melted and lightly browned. Add flour, stirring constantly, until fully incorporated. Continue to cook flour mixture for 5 minutes, stirring frequently.

step 3.

Add chicken stock, salt and black pepper, stirring constantly, until smooth with no lumps. Scrape bottom and sides of saucepan to release brown bits. Allow gravy to slowly reduce until desired thickness.

step 4.

Discard neck pieces but keep giblets. Chop giblets, add back to gravy. Stir to incorporate and serve.
