1  pound ground turkey

8  ounces cremini mushrooms, stemmed and finely chopped

2  large eggs, room temperature, lightly beaten

1/2  cup chopped yellow onions

1/3  cup old-fashioned oats

2  tablespoons grated parmesan cheese (optional)

1  teaspoon sea salt

1/2  teaspoon ground black pepper


step 1.

Preheat oven to 400°F.

step 2.

In a large mixing bowl combine, turkey, eggs, onion mushrooms, oats, parmesan, salt and pepper.Fold together thoroughly to mix. Roll into 2-ounce balls and transfer to a rimmed baking sheet. Bake, uncovered, 14 -16 minutes or until thermometer inserted into the meatball registers 165°.

Allow to cool to room temperature. Store in an air-tight container until ready to serve, up to 5 days.
